Texas Wagyu Tenderloin Wings & Tips
Center-cut Filet Mignon luxury, portioned into versatile, bite-sized cuts. Harvested from the tenderloin (psoas major) during the artisan hand-trimming of our whole roasts and center-cut steaks, these tenderloin wings and tips share the exact same fine-grained muscle structure and effortless softness of a premier filet.
While conventional supermarket "beef tips" are often a random assortment of tough, lean trimmings that require long marinating or stewing, our Texas Wagyu Tenderloin Tips are 100% genuine tenderloin. By crossing champion Japanese Wagyu with heritage Black Angus, we infuse these naturally delicate cuts with luscious intramuscular fat and bold, savory beef savor. Requiring zero tenderizing, they self-baste the second they hit screaming heat—delivering an intensely juicy, fork-tender bite with a caramelized crust in a convenient, recipe-ready format.
The G Five 50/50 Heritage Advantage
-
50% Texas Angus Backbone: Provides the robust, hearty beef depth that gives these tender bites real substance, holding up boldly to coarse pepper rubs, screaming-hot cast iron sears, and rich pan sauces.
-
50% Japanese Wagyu Lineage: Weaves low-melting intramuscular fat throughout the fine grain, ensuring these smaller cuts stay succulent, moist, and tender rather than drying out during high-heat cooking.
The Cut & Farm-to-Table Advantage
-
Genuine Filet Mignon Tenderness: Because they are carved directly from the tenderloin muscle, these tips deliver the softest texture on the entire steer—effortlessly fork-tender with zero chewiness.
-
Unrivaled Kitchen Versatility: The ultimate shortcut to luxury dining. Flash-sear them as gourmet steakhouse bites, thread them onto skewers for live-fire appetizers, elevate classic beef stroganoff, or toss them into high-heat wok stir-fries and breakfast hashes.
-
100% Pasture-Raised Transparency: Born and raised on open Texas pastures with no artificial growth hormones or preventative antibiotics—delivering wholesome, nutrient-dense beef with uncompromising farm-to-table integrity.

Chef’s Flash-Searing Guide
Because tenderloin tips are small and tender, cooking hot and fast is essential to develop a deep crust without overcooking the center.
-
Slow Thaw & Temper: Thaw completely in the refrigerator over 24 hours. Set on the counter for 15 to 20 minutes before cooking to remove the refrigerator chill.
-
Dry & Season: Pat each piece completely dry on all sides with paper towels (dry surface guarantees a crisp sear). Season generously with G5 SPG Seasoning or coarse sea salt and cracked black pepper right before hitting the pan.
-
Screaming-Hot Pan: Place a heavy cast iron skillet over high heat until lightly smoking. Melt a spoonful of G5 Wagyu Beef Tallow to slick the bottom of the pan.
-
Flash Sear in a Single Layer: Add the tips to the skillet in a single layer without crowding (sear in batches if necessary). Let them sear undisturbed for 60 to 90 seconds until a deep, dark crust forms, then flip and sear for another 45 to 60 seconds.
-
Keep It Rosy: Pull from the heat at medium-rare (approx. 130°F internal) to maintain the cut's silky, delicate texture. Avoid overcooking past medium.
-
Rest & Serve: Rest on a warm plate for 3 minutes to let the juices settle. Serve immediately as garlic-butter steak bites, skewer with toothpicks for an appetizer, or toss into your favorite sauce.
