100% Fullblood Wagyu Stew Meat
Elevating humble comfort food to five-star fine dining. In conventional grocery stores, stew meat is treated as an afterthought—an inconsistent mix of lean, tough scrap trimmings that take hours of simmering just to become chewable. The G Five 100% Fullblood Wagyu Stew Meat completely redefines what braised beef can be.
Hand-carved into uniform cubes from premium whole-muscle cuts of our registered, purebred Japanese cattle, this stew meat is dense with fine intramuscular marbling and rich connective tissue. Under low and slow heat, the delicate Wagyu fat and natural collagen liquefy throughout each cube, basting the beef from the inside out. The result is fork-tender, melt-in-your-mouth beef that coats your spoon in a rich, glossy, savory reduction laced with pure Wagyu's signature sweet umami aroma.
The 100% Fullblood Genetic Advantage
-
100% Pure Japanese Bloodlines: Sourced strictly from registered, closed Japanese lineages with zero outside crossbreeding. This purity produces remarkably fine marbling and silky muscle architecture that commercial beef cannot replicate.
-
Ultra-Low Melting Point Fat: Pure Fullblood fat is exceptionally high in heart-healthy monounsaturated fats (oleic acid) that melt at roughly 75°F to 80°F. As your stew simmers, the fat renders cleanly into the sauce rather than leaving a waxy or greasy coating on the roof of your mouth.
-
Sweet Umami Depth: When seared hard in a pot, pure Wagyu fat caramelizes with the beef proteins to release a sweet, nutty, deeply savory aroma that forms an irresistible foundation for any braise.
Elevated Comfort & The Farm-to-Table Advantage
-
Built-In Sauce Body & Gloss: Naturally packed with rich collagen that breaks down into luscious gelatin during slow cooking, enriching your broths with the velvety body and glossy sheen of a classic restaurant demi-glace without the need for excess starch.
-
Unrivaled Comfort Food Versatility: The ultimate luxury upgrade for classic Texas chili (no beans required), rich French Boeuf Bourguignon, traditional Hungarian goulash, hearty beef pot pies, or authentic Japanese Wagyu curry.
-
100% Pasture-Raised Transparency: Born and raised on open Texas pastures with clean forage and zero artificial growth hormones or preventative antibiotics—delivering wholesome, nutrient-dense beef with uncompromising farm-to-table integrity.

Chef’s Dutch Oven Braising Guide
Because 100% Fullblood Wagyu fat renders so cleanly, a hard initial sear followed by a gentle, low simmer is the secret to spoon-tender perfection.
-
Slow Thaw & Temper: Thaw completely in the refrigerator over 24 hours. Set on the counter for 20 minutes before cooking to remove the refrigerator chill.
-
Dry & Season: Pat each cube thoroughly dry with paper towels (moisture prevents proper browning). Season generously on all sides with G5 SPG Seasoning. (Optional: Dust lightly with unbleached flour for an extra-deep crust).
-
Hard Sear in Batches: Heat a heavy enameled Dutch oven over medium-high heat until hot. Melt a spoonful of G5 Wagyu Beef Tallow. Add the beef in small batches without crowding the pan. Sear undisturbed for 2 to 3 minutes per side until each cube develops a dark mahogany crust, then remove to a plate.
-
Build the Fond: Sauté diced onions, carrots, celery, and smashed garlic in the remaining rendered tallow until fragrant and caramelized. Deglaze the pot with 1 to 2 cups of dry red wine (such as Cabernet or Pinot Noir) or rich dark ale, using a wooden spoon to scrape up all the savory browned fond from the bottom.
-
Low & Slow Simmer: Return the beef and its resting juices to the pot. Add rich beef bone broth until the cubes are two-thirds submerged. Tuck in fresh sprigs of thyme, rosemary, and a bay leaf. Cover tightly with the lid and transfer to a 275°F (135°C) oven (or lowest stovetop simmer).
-
Braise to Spoon Tenderness: Cook undisturbed for 2 to 2.5 hours, until the cubes are fork-tender and yield with zero resistance. Skim any excess liquid fat if desired, adjust seasoning with sea salt, and serve piping hot over buttered egg noodles, creamy polenta, or rustic mashed potatoes.
