Texas Wagyu Chuck Roast
Elevate Sunday dinner and home comfort food to five-star steakhouse standards. While traditional chuck roasts are known for hearty pot roasts, conventional grocery store cuts often end up lean, stringy, or tough. The G Five Texas Wagyu Chuck Roast completely redefines low-and-slow cooking.
Cut from the center of the chuck roll, this roast is woven with dense, spiderweb ribbons of low-melting Wagyu fat and rich collagen. As it braises in a Dutch oven or bathes in wood smoke, the marbling continuously melts through the muscle fibers, basting the beef from within. The result is fork-tender, melt-in-your-mouth beef and a naturally rich, glossy sauce that turns an everyday comfort meal into a gourmet centerpiece.
The G Five 50/50 Heritage Advantage
-
50% Texas Angus Backbone: Delivers the deep, hearty, mineral-rich beef flavor that stands tall against heavy aromatics, red wine reductions, and hardwood smoke.
-
50% Japanese Wagyu Lineage: Wires dense, fine-grained marbling throughout the roast with a significantly lower melting point, guaranteeing the meat stays moist, juicy, and velvety rather than drying out during long cooks.
One Cut, Endless Culinary Possibilities
-
The Ultimate Dutch Oven Pot Roast: Slowly simmered with red wine, fresh thyme, garlic, and root vegetables, the rendering Wagyu fat enriches the braising broth into an artisan, velvety demi-glace.
-
Pitmaster’s "Poor Man’s Brisket": Rub with coarse pepper and sea salt, smoke over Texas post oak at 225°F, and wrap in butcher paper. It develops a competition-grade mahogany bark and carves like prime brisket flat in half the cook time.
-
Artisan Barbacoa & Birria: Pulls apart effortlessly with two forks into rich, succulent shreds for gourmet tacos, enchiladas, or French dip sandwiches.

Chef’s Dutch Oven Braising Guide
-
Temper & Season: Thaw completely in the refrigerator over 24 to 36 hours. Pat bone-dry with paper towels and season generously on all sides with G5 SPG Seasoning.
-
Hard Sear: Heat a heavy enameled Dutch oven over medium-high heat with a spoonful of G5 Wagyu Beef Tallow. Sear the roast undisturbed for 3 to 4 minutes per side until a deep, dark brown crust develops. Remove and set aside.
-
Build the Braise: Sauté diced onions, carrots, and celery in the remaining rendered tallow until softened. Deglaze the pot with 1 cup of dry red wine (Cabernet Sauvignon or Pinot Noir), scraping up all the caramelized browned bits from the bottom.
-
Low & Slow Simmer: Return the roast to the pot. Add rich beef stock until the liquid comes halfway up the sides of the meat. Toss in fresh rosemary, thyme, and crushed garlic cloves. Cover with a tight-fitting lid and braise in a 275°F oven for 3 to 4 hours.
-
Shred & Serve: The roast is done when a fork twists effortlessly into the center with zero resistance (approx. 203°F internal). Rest in the liquid for 15 minutes before shredding or thick-slicing, spooning the pan juices generously over top.
