100% Fullblood Wagyu Chuck Roast
Elevate slow-cooked comfort food to five-star chophouse standards. While traditional grocery store chuck roasts can lean dry, stringy, or tough, the G Five 100% Fullblood Wagyu Chuck Roast completely transforms the low-and-slow culinary experience.
Sourced exclusively from registered, uncrossed Japanese bloodlines, this roast is woven with dense spiderwebs of low-melting intramuscular fat and rich connective tissue. As it gently simmers in a Dutch oven or bathes in gentle wood smoke, the pure Wagyu fat melts effortlessly through the muscle fibers, basting the beef continuously from within. The result is unctuous, spoon-tender beef and a naturally glossy, velvety sauce laced with pure Wagyu's signature sweet umami aroma.
The 100% Fullblood Chuck Roast Advantage
-
Pure Japanese Lineage: 100% purebred genetics with zero outside crossbreeding, preserving the centuries-old traits responsible for fine-textured marbling and delicate grain.
-
Ultra-Low Melting Point: Fullblood intramuscular fat is exceptionally high in monounsaturated fats (oleic acid) that liquefy at roughly 75°F to 80°F. During low-and-slow braising, the fat renders cleanly into the meat without leaving a heavy, greasy mouthfeel.
-
Sweet Umami Aroma: As the roast slowly simmers or smokes, it releases a distinct, sweet, and nutty aroma unique to pure Fullblood Wagyu beef.
Versatile Low-and-Slow Preparations
-
The Ultimate Dutch Oven Pot Roast: Simmered gently with dry red wine, fresh herbs, and root vegetables, the rendered Wagyu fat creates a rich, restaurant-grade pan sauce that coats the back of a spoon.
-
Smoked Wagyu "Poor Man’s Brisket": Rub with coarse pepper and sea salt, smoke at 225°F over mild hardwood, and wrap in butcher paper. It develops a crisp, peppery bark and carves like prime brisket flat in half the time.
-
Luxury Barbacoa & Birria: Shreds effortlessly with two forks into moist, glistening strands for elevated street tacos, artisan ragù over fresh pasta, or decadent French dip sliders.

Chef’s Dutch Oven Braising Guide
Because 100% Fullblood fat renders at low temperatures, gentle heat is key to keeping the roast succulent and silky.
-
Slow Thaw & Temper: Thaw completely in the refrigerator over 24 to 36 hours. Pat completely dry with paper towels and season generously on all sides with coarse sea salt or G5 SPG.
-
Gentle Sear: Heat a heavy enameled Dutch oven over medium heat with a small spoonful of G5 Wagyu Beef Tallow. Sear the roast for 2 to 3 minutes per side to set a golden-brown crust without scorching the delicate outer fat. Remove and set aside.
-
Build the Foundation: Sauté diced onions, carrots, and celery in the remaining rendered tallow until fragrant. Deglaze the pot with 1 cup of dry red wine (Cabernet Sauvignon or Pinot Noir), scraping up all the caramelized browned bits from the bottom.
-
Low & Slow Simmer: Return the roast to the pot. Add rich beef bone broth until the liquid comes about halfway up the roast. Toss in fresh rosemary, thyme sprigs, and crushed garlic. Cover tightly with the lid and braise in a 250°F–275°F oven for 3 to 4 hours.
-
Rest & Serve: The roast is ready when a meat fork inserts and twists in the center with zero resistance (approx. 203°F internal). Let the roast rest in the warm braising liquid for 15 minutes before carving thick slices or pulling into large, succulent flakes. Spoon the velvety pan juices over top.
