100% Fullblood Wagyu Bavette

The crown jewel of Parisian bistros and the best-kept secret of master butchers. Known across France as bavette d'aloyau and in American butcher shops as the sirloin flap, the bavette is celebrated for its loose, rope-like grain and remarkably intense, beef-forward richness. While often grouped with skirt or flank steak, the bavette is thicker, more uniform, and inherently more tender.

When sourced from our registered 100% Fullblood Japanese cattle, this rustic bistro classic transcends into world-class luxury. Saturated with gossamer-fine webs of low-melting intramuscular fat, the open grain of the bavette acts like a natural sponge, self-basting the meat the second it touches screaming heat. The result is a steak that develops a deeply caramelized, savory outer crust along its textured ridges while remaining extraordinarily juicy, carving into buttery ribbons that melt across the palate with pure Wagyu's intoxicating sweet umami finish.

The 100% Fullblood Genetic Advantage

  • 100% Pure Japanese Bloodlines: Traced strictly to registered, closed Japanese lineages with zero outside crossbreeding. This purity produces remarkably fine marbling and an ultra-delicate muscle architecture that commercial beef cannot achieve.
  • Ultra-Low Melting Point Fat: Rich in heart-healthy monounsaturated fats (oleic acid) that liquefy at roughly 75°F to 80°F. The marbling renders cleanly across the palate, delivering a velvety, buttery mouthfeel without a trace of greasy heaviness.
  • Signature Sweet Umami: When exposed to a hot cast iron skillet or glowing coals, rendering Fullblood tallow releases an intoxicating, sweet, and nutty aroma exclusive to purebred Wagyu cattle.

The Bavette Cut & Farm-to-Table Advantage

  • Filet Softness Meets Sirloin Depth: Combines the deep, mineral-rich beef savor of the bottom sirloin with the pillowy, fork-tender bite of a premier tenderloin cut.
  • Open-Grain Architecture: The distinct, coarse grain naturally captures dry rubs, marinades, and pan juices far deeper than tightly grained cuts, creating countless micro-ridges for blistering crust formation.
  • The French Bistro Benchmark: The undisputed gold standard for classic Steak Frites, elevated Latin carne asada, high-heat stir-fries, or thick, chimichurri-drizzled steakhouse carving platters.
  • 100% Pasture-Raised Transparency: Born and raised on open Texas pastures with clean forage and zero artificial growth hormones or preventative antibiotics—delivering wholesome, nutrient-dense beef with uncompromising farm-to-table integrity.

Chef’s High-Heat Searing & Carving Guide

Because the bavette has a wide, distinct grain and fine marbling, a scorching-hot flash sear followed by carving strictly against the grain will unlock peak tenderness.

  1. Slow Thaw & Temper: Thaw completely in the refrigerator over 24 hours. Set on the counter for 20 to 30 minutes before cooking to remove the refrigerator chill.
  2. Season Delicately: Pat bone-dry on all sides with paper towels. Season generously with G5 SPG Seasoning or coarse sea salt right before cooking—pure Fullblood needs minimal seasoning to allow its natural sweetness to shine (or marinate briefly in olive oil, garlic, and fresh herbs).
  3. Screaming-Hot Flash Sear: Heat a heavy cast iron skillet with a spoonful of G5 Wagyu Beef Tallow over high heat until lightly smoking (or prepare your grill for maximum direct heat, 500°F+).
  4. Quick Contact: Lay the steak flat and sear undisturbed for 2 to 3 minutes per side, developing a deep, golden-brown crust.
  5. Target Temperature: Pull immediately when the internal temperature reaches 125°F–130°F for rare to medium-rare. Pushing past medium-rare will cause the delicate intramuscular fat to render out and the open grain to tighten.
  6. Rest & The Cross-Grain Carve: Transfer to a warm cutting board and rest for 7 to 10 minutes to allow the savory juices to settle. Crucial Carving Step: Identify the long, parallel grain running across the steak. Hold your knife at a 45-degree angle and carve thin, pencil-width slices strictly against the grain (perpendicular to the muscle fibers) to shorten the grain and deliver an effortless, melt-in-your-mouth bite.
